Chicken Nuggets... never been so easy... never been so Italian!

Hello Everyone,
here it is my very first recipe in English... wow I am a bit scared, because a talk a lot, too much sometimes, but I don't write that much... so... well better get into the topic!
Today I am going to show you how to make chicken nuggets, I chose this recipe because is very easy, and I thought it was a good way to start! Everyone can make them. It's true they take a little time to be made, but less than you think and they turn ap much much better than any other fast food nuggets, let's just give it a go!

Ingredient - serve 2
2 chicken breast or 200gr diced chicken
2 eggs
200gr breadcrumb - you can buy it in every supermarkets, but if you have some leftover bread blitz into a food processor, and make your own
1 lemon, just the juice
salt and pepper

In a bowl mix the eggs with lemon juice and place your diced chicken (the size you wish, smal big, or leave it as fillet!) amd leave it to marinated as long as you can at least 30", the longer the better!
If you decide to cook them in the oven make ready your breadcrumbs, mix it in a bowl with 3 tbsp of olive oil.
Remove the chicken from the marinated and shake off any excess. Dip your chicken into the breadcrumbs, make sure it is all nice and covered. Fry on a medium heat in a pan with little oil (I like use olive oil, however sunflower oil or rapeseed oil will work just fine!) cook it for 2/3" each side or until look nice golden brown!
To cook them in the oven: once you've dipped them in the oily breadcrumb, place them on a baking tray lined up with parchment paper and cook for 20-25" at 210°C flip them over half way thru.

Tip:
if you want to freeze them, make sure you use fresh chicken, then once you've rolled into the breadrumbs place on a tray lined up with parchment paper and cover with cling film, place in the freezer and leave it all night, than place into a sealing bag and put it bag in the freezer, you can use them up to three months, simply fry or bake them from frozen, add a couple mins of the cooking time!

Helloooo!!!

First of all I think it's nice and polite introduce myself, so I am Margherita a.k.a Meg I opened my first food blog in 2011 (www.incucinaconmeg.com) in Italian, which is my mother tongue, where I post all my favourite recipes, I create them in my little kitchen and all the inspiration comes from place I go, people I meet and my partner requests! However I live in London, so I have many friends that don't speak Italian and most of them always ask me to translate my recipes or do my YouTube video in English. Well, here I am, with my first English project, so I hope you'll apologise me for my English, feel free to write a comment and mark all my mistakes, that'd be very helpfull and appreciated!
